We select our Rainbow Trout, raised in the clean cold mountain waters of this pristine Smokey mountain region, because they are by a long margin, the very best available. The trout filets produced in the Andrews region are thicker and heavier than any others available. This is the reason that our smoked trout is so moist and succulent. In addition, we do not freeze our smoked trout, it gets shipped to you fresh.
