Of all the things that we make here in Stonington, I get the most excited about our finnan haddie. When Mary and I left Shetland in 1997 and moved to Maine, we had quite a few
years to get through without any finnan haddie. The only stuff available around here was bright yellow, with the artificial dye, and freezer burnt to a fibrous death. It was a sad situation.

After our new smokehouse was built and opened in 2000, and we installed the Torry kiln that had just spent three weeks on a ship coming from Scotland, we immediately smoked up a batch of finnan haddie. What a joy it was to have such a wonderful dish back on our table again!

Now we have three boys, age 3, 5, 7, and they just love finnan haddie. It is one of the few meals that we can cook up for the boys and guarantee that there will be no complaints. They even sit still and stay quiet when they are eating it!
