Sides of Salmon being dry cured

At Stonington Sea Products we follow the ancient tradition of bench dry curing our salmon. The salmon will loose about 15% weight as the water is drawn out by the kosher salt. After dry cureing the salmon has become firm and is ready to be cold smoked for sixteen hours overnight in our traditional Scottish Kiln.
