Arctic Char is a cold water lake fish of exceptional eating quality. They are a little similar to trout but they have a rich fat layer between the pink flesh and skin. This gives them extra succulence when lightly smoked.

This fish is unusual because it swims down river every year and spends a few months in brackish (salty) water at the river mouth feeding on shrimp and other sea creatures. Arctic Char are normally found North of the Arctic Circle in very cold water... this fish is top of our hot smoked line!
