Our Scottish style cold smoked salmon is dry-cured with kosher salt only. Using a special traditional Scottish curing method introduced to Stonington from the Shetland Isles by our smoke master Richard Penfold. We do not use corn syrup or any kind of preservatives. Also unlike other smokehouses, we do not use bacteria sprays on our fish before or after smoking. Our recipe for excellence is simple: very fresh salmon, kosher salt, and 16 hours of gentle hickory smoke in our historic Scottish kiln. Our salmon are reared in deep-water near Grand Manan Island, in the Bay Of Fundy, where they have to constantly swim against strong currents produced by huge 23-foot tides. The record tides provide exceptional seawater conditions, abundant with silver herring and feeding whales, they produce the highest quality Atlantic salmon in the World. The extended smoking time with real hickory chips burning very slowly makes all the difference, with the rich omega3 oils in the fish rising naturally. The result is a light smoke, a mild cure, which enhances and preserves the rich, delicate buttery taste of our exceptional scottish style smoked salmon.
