This year we are again excited to be using a special single malt ISLAY scotch whisky hand cure to finish our cold smoked salmon. This single malt ISLAY has a warm honey color, it is full bodied and robust. The nose is wood cinders, smoke and subtle citrus. Palate gives sea salt, burnt oak chips & vanilla. The finish is of sweet smoke with a hint of iodine. This exceptional single malt comes from Scotland’s second oldest distillery on the tiny and remote “Whisky Island” of Islay - off the West coast of Scotland. The quality of air, deep peaty ground and cold salt wind combine to create the strongest flavor of all malt whisky. Partnered together with our select choice cherry and hickory wood smoked Atlantic salmon, the Islay single malt imparts a marvelous richness and complexity of flavor, as well as a luxurious, satiny texture and silky mouthfeel.
