	About Smoked Seafood
	How long can I keep my smoked seafood before I eat it?
	Since we use no preservatives, your smoked seafood should be stored in a refrigerator. It can be stored unopened in a refrigerator for up to seven days or until the "Sell By" date, whichever comes first. Please enjoy within five days of opening.

	Can I freeze my smoked seafood?
	Our smoked seafood packaged under vacuum can be frozen if unopened. The eating quality will deteriorate slightly during the freezing process, but can be minimized if you do not keep it frozen for over two months. Thaw slowly in the fridge overnight, keep refrigerated, and eat within a couple of days.

	Can I freeze smoked scallops or mussels?
	Products that are packaged loose, not under a tight vacuum, do not freeze well. This is because the air in the freezer will dry out the product degrading the quality.

	Can I freeze the smoked pate?
	The smoked pates contain cream cheese and should not be frozen.

	Which smoked products are from wild fish and wild shellfish?
	Smoked king salmon, smoked mackerel, smoked bluefish, smoked sea scallops, smoked halibut and smoked Finnan haddock are all wild fish and shellfish. The rope-cultured mussels grow on ropes put out by a farmer, but they grow in the same way as a wild mussel, feeding on plankton etc. with no further intervention.

	Where do the wild king salmon come from?
	We use hook caught (by trolling) ocean-run wild king salmon captured off Alaska. The Alaskan fishery is thought to be one of the most sustainable wild fisheries in the world. Wild salmon swim freely and feed in their natural habitat. They tend to be richer in Omega-3 oils than Atlantic salmon.

	Which smoked products are from farmed fish?
	Our Atlantic salmon (cold smoked and roasted) are farmed in ocean pens in the Bay of Fundy. The Arctic char is farmed in inland ponds in Iceland. The Rainbow Trout is farmed in the Western mountains of North Carolina.

	What is the difference between cold smoked salmon and roasted (hot smoked) salmon?
	Cold smoked salmon is smoked at low temperatures, has a firm,buttery texture. and is easily sliced. Roasted smoked salmon is cooked as it is smoked and is eaten in luscious flakes.

	What happens if no one is at home when my seafood arrives?
	Our seafood is shipped without a signature requirement upon delivery. You do not have to be home to accept the delivery. You can request that a signature be required, but then someone has to be home to accept the delivery. If you request a signature delivery and are not home, UPS will hold your perishable seafood package and attempt to deliver it to you the next day. Lobsters are not very likely going to survive for another day. Many of our customers have their seafood shipped to their business address. If you are sending this item as a gift please be sure that you inform the recipient that a perishable gift will be arriving on a particular day.
